Joining a meat CSA for the winter has been one of the best choices we've made in regards to local food for our family. We have had so much fun learning from our friends at 2Silos. The meat from 2Silos and the deer that came home from Eric and Blake's hunting trip has provided our family with an amazing winter meat crop. We've learned a lot as we've experimented with different types and cuts of meat this winter. We've pushed ourselves to remain open minded as we try new things. However, the rabbit that came in our February share was more than I could handle. At the same time I was simply unable to waste local, organic meat. I forced myself to thaw it out earlier this week. Last night was the deadline, use it or loose it. So, the rabbit went into the crockpot and cooked all night. Much to all of our surprise, it was wonderful! All five us at our share, with plenty left for later this week. It was the most tender, flavorful meat I've had in a very long time.
Each of our children were given a date alone with mom and dad for Valentine's Day. Yesterday was Trey's turn. The three of us went to the Maple Sugar Festival at the Stratford Ecological Center. This place is amazing. We went in September for their Harvest Festival and knew we want to come back again soon. I knew nothing about maple syrup, although we consume a ton of it. We learned so much...how to tap a tree, how it is gathered, and then how the sap is turned into maple syrup. The only way I know to summarize the experience is that food, real food, is spiritual. As Trey and I took a walk through the woods I was brought to tears talking with him about the creativity of our Father to have provided all we need through His creation.
