Why preserve summer's harvest? Because I would much rather pay Farmer Kevin for green beans than the Jolly Green Giant. Farmer's Kevin's green beans and tomatoes were canned in August and made a warm soup tonight after we came in from playing in the snow. I adapted this recipe from one I found on the internet...
Brown one diced onion in olive oil. Add four diced potatoes (available at the Worthington Winter Market) with the skin on. Add one quart canned green beans with liquid and one pint canned green beans drained. Add one quart canned tomatoes cut up with their juice. Stir in 3 T. flour. Add 6 c. water, a couple pinches of basil (check out Frontier spices, they are amazing), a couple squirts of Bragg's Liquid Aminos (or soy sauce), and two cloves pressed garlic. Salt and pepper to taste. Bring to boil. Reduce heat and simmer for 2-4 hours. So good with baking powder biscuits. I just discovered that biscuits from scratch take all of 10 minutes and are amazing. This will make a HUGE pot of soup, which you may need if a very large homeless man shows up for dinner at 5:30. That's a story for tomorrow that will require a post all of its own.
We also discovered snow ice cream today. So easy, so fun. We made vanilla after lunch and chocolate after dinner. Yep, no school today. We are covered in ice and snow! I love it! No school again tomorrow, which makes this mommy very happy. I seem to need a few extra hugs lately from my boys. Their company today was a huge help in keeping my mind off of the mess we're dealing with in Liberia.

Hi friend! How are you doing? Your soup sounds yummy. I too love preserving local fresh produce. I'm hoping to get a pressure canner this summer - right now i'm stuck with bwb canning, freezing, or dehydrating. I'm also hoping my garden does better this year than the last :) Atleast I know what grows well here now.
