Riley started first grade today. As ready as I am for fall weather, I wasn't quite ready for our summer schedule to end. We have had so much fun this summer. It was great having Eric home during the day because so many of our mornings were spent as an entire family. So today when only four of us sat down for lunch, my heart hurt a little. Trey was very sad to leave his brother at school, but that will get easier when he starts pre-k on the 9th. Riley was extremely excited all morning and couldn't wait to leave the house. We are thrilled with the teacher he was given this year. And, a few of his good friends from kindergarten are in his class as well. He was so happy when I picked him up and said he can't wait to go back tomorrow. I'll get used to this again, it wasn't nearly as hard as leaving him at kindergarten last year. But, it wasn't easy. I'll post pictures of my first grader tomorrow.
In other news, the weather was great today. There was a little chill in the air, which inspired me to pull some carrots from the garden to use in potato soup for dinner. It tasted great with the zucchini carrot bread I made last night. The boys and I finished dinner off with a bunt cake Trey and I made from scratch. It was so good. The best part is that it had a secret ingredient, beets! A great way to use up the HUGE beet Eric pulled from the back yard last week. This was my first bunt cake, and it looked so pretty on the table. We just miss having Eric home to enjoy all this with us. So, I was able to sneak in zucchini, carrots, and beets to my boys dinner tonight with no one complaining!
The last Wednesday of each month is 50% off day at Ohio Thrift. I try to make it there each month, but this month was a must because Riley has completely outgrown all of his clothes. The younger two usually have enough hand-me-downs for each new season, but I usually need quite a bit for Riley. I bought 5 pair of pants for him for $6.50! He tried them on after school and they all fit. That's a pretty good start on fall and winter clothes.
Time for bed.
A bundt cake with beets?!
I love beets... typically I roast them in the oven and eat with a little bit of salt on them. Nick on the other hand won't get within 10 feet of them. Could you share your recipe? It would be interesting to see how Nick takes to it.
