A few pictures from the trip to the farm last week.






We like to have fun with food in our house. Eric and I both enjoy to cook and bake and we have fun doing it with the boys. We've been somewhat vegan-ish (not hard core by any means) for awhile now. Now it seems as if Trey has a dairy allergy so we're really watching what ingredients were using. For the last couple of years I've had fun with the Un-Cheese Cookbook by Joanne Stepaniak. Today's lunch, Cheez-A-Roni, was from there and it was my favorite recipe I've tried from this cookbook. Besides skipping the dairy and the things that concern us with that, you add a lot of great nutrients to your kid's diet from ingredients like nutritional yeast, legumes, and tahini...just to name a few. So, there is my plug for my favorite vegan cookbook if you're interested! I also finally found a fake mozzarella cheese that melts, tastes good, and doesn't contain casein. Thanks to the helpful folks at Whole Foods, my kids can enjoy pizza again.

To continue in the food theme, we worked together to create (in my opinion) the best meal that has ever been made in our home this past Sunday.

--Spinach salad with sliced strawberries, toasted almonds, and lightly grilled red onions...topped with a homemade pineapple poppy seed dressing.
--Velvety Vegetable Soup from the Simply in Season Cookbook, spring section. This is a pureed soup with potatoes and spinach, but what really made it great was the spices...tarragon and thyme.
--My husband's AMAZING homemade berry scones.

It was fun to make, and even more fun to eat! The boys loved all of it. Trey said, "This is so good, we should have it every day. But, we should invite a lot of people next time because they would like it too!" Trey is quite the picky eater, so this was a big compliment!

Soon I'll post pictures from my baby brother's wedding last weekend! I still need to download them onto my computer.
